Aldia concentrated glaze is a hot glaze that can be diluted with up to 80% of water, jam or fruit filling.
The mixture needs to be heated to 85°C to activate the pectin, which will give the necessary jellification. This product gives an excellent shine and is freeze/thaw stable.
Our hot glaze can be used in various applications such as viennoiserie or pastry.
