A Square of Cherries

Composition

• 2000 gr of buttercream
• 2 slices of cake ( one square of 40 x 60
cm - height 6 cm to be cut horizontally in
slices
• 500 gr of ALDIA NAP or ALDIA
SPRAY
• 250 gr of sugar
• 100 gr of water
• 175 gr of eggwhite
• 475 gr of ALDIA FRUIT FILLING RED
CHERRY
mixed as mousse some ALDIA
FRUIT FILLING RED CHERRY
to decorate
the cake.
• 8 sheets of gelatin
• juice of one lemon
• 500 gr of whipped and sweetened cream.

 

Preparation 

First we make the cherry cream :
Cook the sugar and water at 121° C.
Stirr the eggwhite into snow.
Mix the boiling sugarwater while stirring
with the eggsnow and keep stirring until it
is completely cooled.
Mix the cherry mousse with the lemonjuice
and the softened gelatin.
Blend the whipped cream in the cherry
mousse and finish the cream with the eggwhite-
sugersnow mixture.
Prepare a square frame of 40 x 60 cm and
fill it with a slice of cake.
Spread the cherry cream over the cake
and cover it with the second thin slice of
cake. Add a layer of butter cream on top
of the cake and cover it again with a slice
of cake. Spread another layer of cherry
cream over the cake and a thin layer of
buttercream and cool the frame in the
refrugerator. Remove the frame and cut
the cake in the wanted portions.


 

Finishing

Cover the top with ALDIA NAP or
ALDIA SPRAY and mix some cherry
syrup in the jelly. Decorate the cake with
ALDIA FRUIT FILLING RED CHERRY
and glaze the cherries with ALDIA
NAP
or ALDIA SPRAY. Add a touch
of green to decorate the cake.
